Heat oil in a nonstick skillet over medium-high heat.   2. Sauté white onions in skillet until translucent.   3. Add eggs, avocado and tomatoes and scramble together until eggs are set.   4. Season to taste with salt and freshly ground black pepper and serve immediately.
