Recipe of the Day: Zucchini Bread Muffins


Ingredients

  • 2 large Eggs (Whole)

  • 2 teaspoons Extra Virgin Coconut Oil

  • 1 teaspoon Vanilla Extract

  • 3/4 cup Zucchini

  • 1 cup Organic Golden Flaxseed Meal

  • 1/4 cup SANE Clean Whey Protein

  • 1/2 teaspoon vanilla extract

  • 1/3 cup Xylitol or Erythritol (optional)

  • 1 1/2 teaspoons Cinnamon

  • 3/4 teaspoon Baking Powder

  • 1/4 teaspoon Salt

  • 1/8 teaspoon Allspice Ground

  • 1/8 teaspoon Nutmeg (Ground)

Directions
  1. Preheat an oven to 350°F.  Grease 6 wells of a standard non-stick muffin tin.

  2. Combine the eggs, oil and vanilla in a small bowl.  Using a whisk beat until frothy about 1 minute.  Add the shredded zucchini.
    Add the flax meal, SANE Clean Whey Protein, vanilla extract, xylitol, baking powder, salt, and spices.  Mix with a spoon to combine.

  3. Bake for 25 minutes until slightly puffed, golden and cooked through.  Enjoy with coconut cream if desired.
